Today I share what we've been doing over Christmas and New Year and some thoughts, links, a Christian movie and some other ideas.
Gingersnaps
1 cups sugar
1/3 cup molasses
113g (1/2 cup) butter
1 egg
1 tsp ginger
1 tsp cinnamon
1/2 tsp cloves
2 cups flour
pinch of salt
1 tsp baking soda, dissolved in approx 1/4 tsp warm water
sugar for rolling
Combine 1 cup sugar, molasses, butter and egg in a bowl; mix well. Blend in all remaining ingredients except remaining sugar. Chill Dough (if you want it easier to handle). Roll into approx 1 inch balls; roll in sugar. Place about 2 inches apart on lightly greased or lined cookie sheets, as cookies spread.
Bake at 180C degrees for 7-9 minutes or until edges are firm.
