Tomato Soup
1 tblsp olive oil
1kg tomatoes in quarters
2 onions, coarsely chopped
4 chicken stock cubes
1 clove garlic, coarsely chopped
1tblsp paprika powder
1 tblsp Italian herbs (or mixed herbs)
2 bay leaves
salt and pepper

Heat the oil in a large pan and add the quartered tomatoes, onions, stock cubes, and garlic. Lower the heat and add paprika powder, herbs and bay leaves. Stir well and simmer for at least 20 mins. Remove the bay leaves and puree the tomatoes in a blender. Add water (up to 1/2 litre) to thin the soup if you like. Season to taste.
