This is a new recipe I found in a library cookbook and thought I'd try out. They were fun to make, delicious to eat, and my 2 1/2 year old who often struggles with eating her dinner had at least three helpings!
This recipe makes 12.
Breakfast sausages (or 4 long sausages each cut into 3 pieces)
150g plain flour
4 tbsp. oil
3 eggs
pinch of salt
250 ml milk
Sieve the flour and salt into a bowl and make a hole in the center. Add eggs. Beat the milk into the eggs and flour until you have a have a smooth batter.
Leave to stand for 1/2 hour. (This makes it more light and fluffy when cooked)
Preheat oven to 220C. Add 1 tsp of oil to each muffin hole and heat the tray in the oven for 3 minutes. Take out of the oven and add some sausage to each hole. Put the tray back into the oven for 4 minutes. Remove the tray and half fill each hole with batter.
Cook for 18-20 minutes.
Serve with gravy and vegies.
