These are easy and very yummy!
2 eggs
1/2 cup milk
salt and pepper 1/2 tsp each
1 cup flour
1 tsp baking powder
410g can whole kernel corn, well drained
oil to fry
Break eggs into medium-sized bowl. Add the milk, salt and pepper, then stir together. Add flour and baking powder and stir just enough to make a smooth batter.
Add the corn and mix just enough to combine.
Heat oil in a large non-stick pan, use 1-2 tblsp, Drop spoonfuls of batter into pan, cooking in batches for 3-5 minutes until both sides are golden brown.
Drain cooked fritters on paper towels and serve.
