These are great for lunch boxes or a nice snack. They are soft and chewy.
140g flour
90g rolled oats
1/2 tsp baking soda
1/4 tsp salt
115g butter
225g brown sugar
125g brown sugar
125g peanut butter
large egg
1 tsp vanilla essence
icing sugar for dusting
Preheat oven to 180C. Line baking dish. In own bowl stir together flour, oats, baking soda and salt until well blended. Set aside.
In another bowl, beat together the butter, brown sugar and peanut butter until creamy.
Add egg and vanilla and beat well.
Add flour-oat mixture. Mix until just blended.
Spread batter evenly into pan. Place pan into oven and bake until the top is golden and looks firm (25-30 minutes).
When cold, dust with icing sugar and cut into bars.
