Satay Chicken

One of my favourite chicken recipes!

2 large chicken breasts, chopped
3 carrots chopped
1 leek or courgette, chopped
3 tblsp tomato puree/ sauce
1/2--3/4tsp chilli powder
1 onion, chopped
green beans
1 cup water
5 heaped tblsp peanut butter
mixed herbs
salt and pepper

Cook chicken and onion in oil. Add carrots and other vegetables and cook until slightly soft. Mix in tomato puree, water and peanut butter so that there is a sauce consistency. Cook for 10 minutes and add mixed herbs, chilli powder, salt and pepper, to taste.

Serve on rice.
