We have lots of strawberries in our garden at the moment, so I needed to find some way to use them up. This is a really easy recipe and they turned out well.
1/2 cup canola oil
1 cup milk
1 tsp salt
1 tblsp and 1 tsp baking powder
1 cup white sugar
3 1/2 cups flour
2 cups chopped strawberries
Preheat oven to 190C (375F). Place muffin liners in muffin trays.
In a small bowl, combine oil, milk, and eggs. Beat lightly. In a large bowl, mix flour, salt, baking powder and sugar. Toss in chopped strawberries and stir to coat with flour. Pour in milk mixture and stir together. Fill muffin cups. Bake for 25 minutes, or until the tops bounce back from the touch. Cool 10 minutes and remove from pans.
